In our home,
hubby is the chef and I’m the baker.
We sometimes
swap roles; I can sling a pizza in the oven perfectly!
The other
day I was baking up a storm making some cupcakes for my boys' birthday, I used a
standard cupcake recipe, which I’m sure you all have.
BUT….
I made the
BEST EVER frosting
Vanilla, Coconut, Butter
Cream Frosting
Oh my
goodness, this stuff is wickedly good; Ahren actually stopped eating the cake
part of the cupcakes to concentrate on the frosting!
You owe it
to yourselves to make some today; you don’t even need to bother with the
cupcakes!
Here are the
ingredients you need, this will make enough to cover 9 cupcakes generously, add more
to cover more!
Cream
together the butter and icing sugar.
When light and
fluffy add the coconut and a few drops of vanilla extract {or not, just as
yummy without}, cream it all together.
Now for the
fun part, separate the frosting into 3 portions.
Add a FEW
drops of food colouring to each batch.
I used a
cocktail stick to add a few drops of
Blue, Red & Green
By only adding
a few drops you will get a lovely pastel shade, perfect for any Spring day!
Some cupcakes with this pastel frosting will make a lovely treat over Easter for those not wanting the chocolate eggs!
